The Holiday Bikini – How to Make It

WHere is a simplified version of a cocktail found on the seasonal menu. This is a large-volume pre-mixed that is bursting with flavours of a festive period, which makes it ideal for a festive gathering. Reserve the remaining syrup to use in morning drinks, desserts, or to make another batch of this cocktail.

Bikini Recipe

Makes enough for 10 servings

To make the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

For the Syrup: Place all the items in a pot, bring to a light boil, mixing so the sugar melts. Then, turn off the heat allowing it to cool completely. Transfer to a sealable bottle, cap it keeping it in the fridge, where it will keep for up to one month.

Preparing the Batch Mix: Mix all the spirits and syrup into one sizeable container, allow it to infuse for 60 minutes, then filter it preferably using muslin, so it's completely strained.

For serving: Measure 85ml of your premix into your stirring glass filled with ice, gently stirring carefully for a minute to chill. Filter to a frosted cocktail glass or a similar vessel, garnish with some cranberries and complete it using a quick spritz with the mandarin essence over the drink.
